I made this originally for chicken satay. It makes a ton, so I ended up making stir fried veggies and rice to go with it. It was a huge hit. I have served this over tilapia and grilled chicken as well. It's originally just peanut sauce but is soooo good we eat it as a peanut curry sauce.
